Chocolate Nut Biscotti

I've been in the mood for some biscotti to go with my coffee. Rather than buy biscotti at a coffee shop, I wanted to make my own. I found a very good recipe.

CHOCOLATE NUT BISCOTTI

Ingredients

2 large eggs
1 Tbsp. instant coffee
1 tsp vanilla extract
2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter
3/4 cup granulated sugar
1 cup chopped hazelnuts or slivered almonds
1 bar (4 oz) 60% cocoa (I used Giarardelli, but Lindt could do just as well.)

Preheat oven to 325 degrees F. Melt the chocolate in double boiler.

Lightly butter and flour a large baking sheet.

Sir in eggs, instant coffee, and vanilla in a small bowl until well blended; set aside.

Mix the flour, baking powder, and salt in a mediuim bowl; set aside.

Beat butter and sugar in a large bowl until light and fluffy.

Beat in the egg mixture.

Gradually add the flour mixture, beating well as you add the flour.

Stir in the nuts and melted chocolate.

Divide the dough into two equal portions.

On a lightly floured surface, shape the dough into two logs, each 14 " long, 1 1/2 " wide, and 1" thick.

Place the logs 4" apart on the baking sheet.

Bake for 25 minutes or until lightly browned.

After cooling, use a serated knife to cut each log diagonally into 3/4" thick slices.

Bake for an additional 12 minutes or until slightly dry.

After the biscotti cook, store in an airtight, dry place. Enjoy your biscotti with coffee!

They are, Heretik, and they're very easy to make. They took me less than an hour, and I have about 30 of them.... minus the 7 we've already eaten. ;)

Those are exactly the kind of biscotti I like, too. My favorites are the dark chocolatey/cocoa ones with slivered almonds in them. Now I can make my own! Sure beats blowing a buck-seventy-five for only one at Starbucks. Mine rock!!

Homemade Biscotti KICK ARSE!!! I have a recipe on eatstuff for citrus flavoured.... but I have been wanting a good chocolate recipe! But I was wondering how much flour goes in... I think you might have left it off the ingrediants. I like my biscotti like this, much better than the versions with butter.. I bet these would be good with toasted hazelnuts too....

Oh chocolate doesn't give me a headache, I think it was the sugar, I don't normally have to much and I was feeling abit "blurgh" could have been the lack of sleep though... hmmm

Thanks for catching that, Clare. It's two cups of all-purpose flour. I added that to my blog post.

If I knew homemade biscotti was so good I would have made it ages ago. This one is definitely a winner.
