Pots De Creme Au Chocolat

As soon as I pick up more cream, I'm going to make Pots de Creme au Chocolat.

I found this recipe in the Count's "The Best of France" cookbook, and it sounds delicious. Pots de Creme is an egg-based custard.

2 cups heavy cream
6 ounces dark sweet chocolate, cut into bits
1/3 cup sugar
4 egg yolks
1 teaspoon vanilla extract
Chocolate curls for garnish

Preheat the oven to 350 degrees. In a heavy saucepan, combine the cream and chocolate and cook over medium heat, stirring, until the chocolate is melted and the mixture is smooth. Whisk in the sugar, the yolks, one at a time, and the vanilla. Strain the custard into six 1/2 cup pots de creme ramekins, or ovenproof ceramic cups, and place in a baking pan. Add enough hot water to the pan to reach halfway up the sides of the dishes. Bake for 25 minutes, or until the top is just set. Remove the ramekins from the pan and let cool. Garnish with the chocolate curls. Serves 6.

We have chocolate layer cake on my Mosser cobalt blue cake plate, but I'm in the mood for more chocolate. These custards sound divine, and easy to make.

this sounds devine! I might have another packet of chocolate stashed away.... but I am not telling!

I had to go out and buy more packets of chocolate, Clare. I used most of them up to make the custards. I live near a beach chocolaterie, and I just couldn't resist. I was too lazy to drive to the grocery store. This chocolaterie is within a short walking distance. Thanks to you, I found that AMAZING brownie recipe at Orangette. The brownies are baking now. I've been looking for a good brownie recipe that didn't make them too dry, and this looks to be it. Two sticks of butter! We're into extreme decadance this weekend. ;)

You live near Chocolatiers? Oh that is so unfair :( Perhaps it is a good thing though...
Those Brownies are soooooooooooooooo good!!!!!!!! They are good after they have been in the fridge too :)
